Using the right vegetables makes these vegetable drinks excellent sources of antioxidants. They are good as snacks, or in combination with lunch.

Milder-tasting juices made from carrots, celery, and apple juice are ideal to start learning about juices.

Stronger vegetables, such as spinach and beets, are high in nutrients, but are best when consumed in small quantities in combination with the milder-tasting vegetables.

PLAIN CARROT JUICE

Benefits of this vegetable drink
Carrot juice is sweet, and is great alone, without any other vegetables. An excellent source of beta-carotene, one glass a day provides all you need to fulfill the requirements to preserve your vision.

Ingredients
3 carrots

Remove green leaves from carrots along with the very top of the carrot into which the green stems insert. Wash the carrots until clean, and insert in juicer.

The benefits of this vegetable drink
My favorite vegetable drink. It is an excellent source of betacarotene, and is very refreshing. It is good on a hot day, or following exercIse.

Ingredients
3 carrots
2 Rome apples

Remove green leaves from carrots, along with the very top of the carrot into which the green stems insert. Wash the carrot tops until clean.

Rinse apples to remove chemicals, then slice and remove seeds and stalk. Insert apples and carrot greens in juicer.

A good source of beta-carotene, lutein and zeaxanthin.

Ingredients
3 carrots
1/2 cup of loosely packed spinach leaves

Remove green leaves from carrots, and wash until clean. Rinse spinach carefully. Make sure to remove sand. Do not remove stems. Insert in juicer.

Vegetable Juice Special

The benefits of this vegetable drink
Similar to V8 juice, but with twice the nutrients. It is rich in betacarotene, lutein, and zeaxanthin.

Ingredients
1 stalk of celery
1/2 cucumber
4-5 medium-sized tomatoes (or 3 large tomatoes)
Small slice of lime (optional)

Remove the bitter outer leaves from the celery and use them to season a salad or soup. Then wash the stalk until clean. Wash cucumber, and slice in half. Remove the skin if the cucumber is waxed. Wash tomatoes, and slice. Remove stem. Add the slice of lime, if desired. Do not peel. Insert in JUIcer.
