Rich in beta-carotene and vitamin C, this drink can be served for breakfast or lunch, or as a snack. The choice of apricots is not arbitrary, as they are among the best sources of beta-carotene.

Ingredients
8 dried apricots 1 Granny Smith apple 1/2 papaya, seeded (if not available, substitute mango) 3 ice cubes 1 tablespoon honey (optional-add to sweeten)

Soak apricots for 3 hours in 2 cups of water. Peel apple and papaya. Combine apricots with apple and papaya in blender.

Blend all ingredients on medium speed until smooth. Add ice cubes, and blend for an additional minute. Taste. If not sweet enough, add honey to sweeten.

1 large peach 1 banana 1 papaya (ifnot available, use mango) 1 orange 1 tablespoon honey 1 pint blueberries 6 ice cubes Peel fruit, remove seeds, then dice. Blend all ingredients together for 1 minute, then serve chilled.
